Cook Along -Tofu/Chicken Kefir lime in Green Peas sauce

Bio:  Vittal born and raised in Bangalore, India learned at an early age to appreciate the food and cooking that remains such an integral part of life in that great city and his family. He pursued this passion and got his bachelor’s degree in Hotel management from Bangalore University and got formally trained in OCLD one of the finest chef schools in Asia. After which he spent his culinary training in various hotels of Oberoi group including, Oberoi Bangalore, Rajvilas, Oberoi Mumbai & Oberoi maidens in various positions and kitchens

He started his culinary career in The Oberoi New Delhi as sous chef, later moved to Raffles Singapore, during his stay for a year Vittal got hands on training on the hundred year old restaurant “Tiffin Rooms” recipes & south Asian cuisines

He then moved to open Amber India San Jose, He spent 12 years with Amber and was responsible in opening their new units and hugely successful catering business, and he was promoted as corporate chef in 2011

He co-founded Jalsa catering & events in 2014, Now as Co-founder and chef of Jalsa catering & events he presents the menu with “think outside the box “approach, by marrying traditional & authentic cooking techniques using seasonal , local,  modern day trends & experimenting with new versions of contemporary styles.

Tofu / Chicken with kafir lime green peas sauce - Serves 2

2 tbs Coconut oil/ olive oil

1/2 pc Red onion chopped

4 pcs Garlic cloves crushed 

1 tbs Ginger chopped

2 inches of Lemongrass sliced

3 pc kafir/ regular lime leaf

1 tsp cumin powder

1 tbs cilantro powder

1 tsp red chili powder

1 tsp salt

2 tsp sugar/ honey/ agave syrup

1 can organic coconut milk

1/2 cup green peas

1.5 cup fresh spinach leaves

16 oz firm tofu diced / chicken thigh or breast diced


  • Have all prep ready before the class starts which will help all of us to move quicker for eg: clean & wash veggies,  clean and cut chicken, chop vegetables
  • Equipment needed: heavy bottom pan, spoons ladle
  • Fresh lime leaf can be purchased at Whole Foods, Asian groceries, or online freshly squeezed lime juice can be used instead
  • Spice powders can be purchased at the Indian grocery store or online
  • Other fresh vegetables, fish, can also be used instead of tofu and chicken
  • Steamed rice, brown rice, or white quinoa can be a great accompaniment for this dish
